If I download a box set, then it's removed by sky from on demand, do I still have access to watch it as I've downloaded it, meaning I have access to watch it forever providing I keep my box sets subscription?

You'll have it for a year from downloading it. If you download an episode it will tell you in your planner the date and time it will automatically be deleted.
*EDIT

It appears to depend on the show/rights on how long a show will be kept on your box.

It's a licensing issue, once they disappear they will go on another service on demand like Netflix or virgin. There rarely on two platforms at once
