    sushi knife advice!

    Can anyone recommend a cheap sushi knife to cut the rolls? I've been given quotes of up to £300 surely there must be a cheaper way!

    Why do you specifically need a sushi knife?

    I just use a 'normal' high quality knife. To stop the rice sticking to the knife I just oil the blade slightly (use a flavourless oil such as corn, sunflower or groundnut).

    Sushi knives are a specialist piece of kit. The only have bevelling the one side, so leaving a clean edge. Are you left or right handed, as you will need to specify.

    I'd be a bit wary about buying this type of knife online without first handling it, or have the opportunity to return if I couldn't get on with it. The same would apply with knives with serrated edges which can have the annoying trait of slicing on an ever increasing angle instead of the 90 degrees you were trying to achieve.

    I would have a look in Millys Store, they carry the I.O Shen Sashimi knifes which are 'decent' at a just about affordable price.

    My regular knives are not slicing neatly.. and I prefer not to oil or water each time I slice it there must be a good knife out there Someone can recommend?

    I'm right handed.. I'm happy to go with any knife that has been tried and tested! Don't wanna spend too much! Defeats the purpose of making sushi

    Have u used these knives for sushi? Which one? Sorry just taking me too the Tesco web page! So not sure which specific one?

    I'm not an expert on sushi knives but did some google-fu for you and found that a "Yanagiba" knife is good for sushi. However the advice that was repeated was that regardless of which knife you buy, you need to sharpen the knife and maintain it well to ensure it remains as sharp as you'd like.

    It's because your knife isn't sharp enough then, nothing to do with it not being the right type. I am guessing you are also getting a build up of rice on the knife as you go?

    Also, are you cutting them correctly? As in using a soft slicing motion, if the knife is sharp enough it should go through reasonably easily.

    I'm not sure where u been looking but u van get them from £40 on words. but as others have said just get a decent and very sharp knife I wouldn't spend over £300 on a knife to cut sushi . maybe if I was a professional chef. working 24/7 with sushi
