    Sweet Potato?? x

    What can I do with it? Is it the same as normal potato? Cn I just mash it? I have carrots too, is it something I can mix with those? Sorry peeps, never cooked it before - fancied a change. Any wonderful ideas??

    Was planning on cooking them tonigt but let it a bit late so will probably do somethin 2mro now

    Can be mashed or baked, used in a casserole anything you do with ordinary potatoes

    sweet potato tastes like chestnuts. best to mix it with normal potato mashed. babies love sweet potato, and mix that with loads different veg. but for adults would say its best to either roast or mash it half and half with white potatoes, as quite a strong taste.

    cut them in circles, like you would a cue cumber. Put them in the oven for about 40mins (sprinkle oil over them).

    and you got chips.

    not quite the same as a normal spud no, but you can cook them in similar ways - mashed is good, although you wont need as much butter or milk as normal potatoes, awesome roasted too.

    I usually boil them and eat as you would a normal potato.

    If you are adventurous, you can make sweet potato pudding. Gorgeous.

    Roast is best IMO - peel, slice into strips, drizzle with oil and pop in oven. It's the only way I like courgettes as well, if you've got some of them hanging about.

    I eat loads of these and mash, boil and to add something to a stir fry also dice these and they are lovely. They don't seem to have such a good shelf life though and I have read that they should not be kept in the fridge.

    WOW thanks guys - Sound lovely, will decide what else I'm doin for dinner 2mro then and give one of those a try. So mashed, baked or chipped......mmmm. Thanks again peeps x x

    cook as you like as a normal potatoe, difference is its sweeter

    I love sweet potato mashed with a bit of garlic, rosemary and of course butter - yum!

    boil them in a bit of stock and some onion, bacon and smoked paprika. then blits and enjoy as a warming thick soup.

    dice some sweet potatos, normal potatos, carrot and turnip, boil them in water for 20 mins, take them out and sieve them toss in a bowl with extra virgin olive oil, mixed herbs and chopped garlic, place onto a baking tray, season and add a drizzle more oilbake on the top shelve for approx 40 mins, i normally have these as a side with lasagne, remember, i like to dice them really small so theye really crispy! if your feeling adventurous add some diced chorizo before they go in the oven. just dont buy the chorizo from aldi. enjoy.

    i have them and butternut squash roasted together on sunday dinner yummy, also home made chips with these are good and mashed with carrot or swede,
    and when i was in egypt they do them on little stalls as jacket potatoes abslutely gorgeous melt in yr mouth

    you just treat sweet potatoes the same as ordinary potatoes..... i normally boil them and mash them up..... tho they have quite a strong taste so don't need too much.... i love them with a sausage casserole.... absolutely lovely..... hungry now lol :thumbsup:

    Mix them with normal potatoes in a mash and use as a topping for cottage or shepherd's pie. Much better than normal potatoes on their own.

    Worth mentioning they are less fattening than ordinary pots yum

    I've been cooking this since I found the easy recipe.it's really lovely.

    BUTTERNUT SQUASH AND SWEET POTATO CURRY
    Serves 4 to 6 depending on the portion sizes
    1 large butternut squash
    2 sweet potatoes
    1 red pepper
    1 yellow pepper
    1 courgette
    50g green beans
    1 red onion
    2 red chillies
    2 cloves garlic
    50g fresh ginger
    1 teaspoon chilli powder
    2 teaspoons turmeric
    2 teaspoons ground cumin
    1 tablespoon Demerara sugar
    1 tablespoon tomato puree
    1 tin chopped tomatoes
    1 tin coconut milk
    Fresh coriander
    2 limes
    Vegetable oil
    Experiment with different quantities of herbs, spices and vegetables, adding bits of this and some of that until it tastes just right.
    This recipe is quick to make, the ingredients are easy to get hold of and most importantly, its healthy and low in fat.
    As always, try your hardest to find the freshest and best-quality ingredients you can (organic if possible). To begin, scrub the sweet potatoes under cold water before cutting themm into bite size chunks.
    I prefer to keep the skins on when I'm cooking them, but you can peel them if you want.
    Cut the squash into pieces the same size, remembering to remove the seeds.
    Lay them on a roasting tray with a little salt, pepper and oil before placing in a pre-heated oven at about 200 degrees centigrade (gas mark 6) until they are a nice golden colour. It doesn't matter if they're not completely cooked through at this stage.
    Next, in a large pot, add a large splash of vegetable oil and place on a medium heat. Add some sliced onion, sliced red and yellow pepper, crushed garlic and some finely chopped ginger. Cook while stirring constantly until they start to soften. Now add some chopped red chilli with the seeds removed as well as all the ground spices. Cook these for a few more minutes while stirring before adding the tomato puree and the Demerara sugar.
    You will notice now that these ingredients have all come together to form a thick paste. Add the chopped tomatoes along with a cupful of water.
    Bring this up to a gentle simmer before adding the tin of coconut milk, the roasted vegetables, the green beans and some sliced courgettes.
    Simmer on a gentle heat for 10-15 minutes but be careful not to overcook the sweet potato and the squash as it may become too mushy.
    Finish with the juice of a couple of fresh limes and plenty of freshly chopped coriander. Serve immediately with some warm sticky rice.
