    Tomato Recipes!!

    Okay HUKD - lets have your best tomato recipes - thanks to Mr Tesco some of us have more tomatos in our larders than normal! Does anyone have any fun, quick and easy recipes?

    My usual quick one for the kids is pasta with tomatoes, sweetcorn and chorizo sausage which I then put in a dish, sprinkle with grated cheese, grill and serve - takes all of 10 minutes!!

    I took mine to a local hostel, Gave me a funny look but were very grateful,

    Maybe an idea for those that really did buy TOO many.

    I make loads of arribiata sauce with tomatoes and freeze it in batches. Pretty east:-

    Put some diced onions and crushed garlic and chopped fresh chillies into some olive oil and soften for about 5-10 mins. Add some chopped red peppers and your chopped tomatoes, some fresh basil, salt pepper etc and that's it. Add to penne pasta or whatever pasta you like. I like serving it with some breaded chicken breast as well.

    I also make minestrone soup courtesy of Delia online - fab recipe.

    homemade tomato soup superb

    bolognaise - brown some mince, add half a chopped onion, a chopped pepper (any colour) and some sliced mushrooms to a pan and cook for 5 mins, add the carton of chopped tomatoes and a little water, add some garlic powder, chilli powder, paprika, basil and oregano then season with salt and pepper. simmer for 10mins and cook spaghetti, voila - bobs your uncle :thumbsup:

    Bruschetta is always a pleasure - but needs to be enjoyed on a day when your'e not seeing anyone important to enjoy it's full garlicky goodness!

    Cut tomatoes into about 1cm dice, sit them in a sieve, and shake/grind a nice bit of salt on them, and leave them for 20 minutes so the excess water drains through. Then mix them with a handful of torn basil leaves and a drizzle of olive oil. Cut some french stick into slices, toast, rub with a cut garlic clove, pile with tomatoes. Add some pesto (pref homemade) and that is a proper delicious snack or starter...

    ...don't even need to bother with onions or peppers - but could add them if you feel it needs it..

    ahh, shudav twigged, i did see the glitch, well try it anyway, its yummy

    make ur own tom soup, with chilli and peppers and lea&perrins, i sometimes add some mint aswel, i love minted tomato soup

    heat it on the hob, add some tinned tuna, peas and sweetcorn and some herbs, serve with rice, or you could mix nearly cooked rice in and finish the rice off in the sauce.

    Well if you cant be bothered cooking, or until you cook - its cheaper than lego...

    actually sounds very nice can we have full instructions and i mean full as hopeless at cooking

    Another favourite of mine is quick crusty bread pizza :-

    slice a crusty loaf, toast either side
    spread some chopped tomatoes all over (if you have any LOL)
    add some chopped red onion
    sprinke some dried mixed herbs
    then add grated cheese all over top and grill till bubbling
