I was updated never to change pounds at EU airport as the exchange rate is costly so any way out

will be spending around £5k and visiting couple of countries

Do not buy cards where you load money onto them like from the post office. I noticed loads of people have issues with these in USA including not being able to use them on flights to buy drinks etc.
Halifax Clarity
Prepaid cards: revolut or monzo.

Credit cards: Halifax clarity or barclaycard platinum travel.

Why would you have to pay for drinks on a flight to the USA?

You have to pay for drinks (and just about everything else) if you're flying with a low cost airline like Norwegian.
