Uhh.. Just made some muffins. Hope they taste better than they look ...

In a mad moment i decided to make some summer fruit and oat muffins.
I wanted to make a batch of 12 but there looks like enough mixture to feed a million!
I kind of made up the recipie so fingers crossed it works, and if not the birds will have a feast of failed summer fruit muffins!!

Pahaa, they look horrid to be honest,
a rather yucky shade of grey when i put them in the oven.
Hopefully they'll just brown and nobody notices!!

They don't taste too good ...
Bit stodgy really.
Suppose you've got to keep trying because practise makes perfect!

I make muffins a lot - just don't mix them too much when all the stuff is together as its better lumpy. The more you make it smooth the tougher it goes for some reason. The fruit tends to make it look greeny grey as well especially if using blueberries. I use frozen fruit now straight from the freezer so it doesn't bleed into the mix. Keep at it - you'll get there with trial and error!

Here's a recipe I use for the basic muffin recipe - and just adapt with choc chips or whatever.

I think the problem was that i went from a recipie but just kept adding and adding.
I added frozen fruit that had been defrosted. I'll keep them frozen next time i think!
And the colour was a kind of icky grey!!

This is the recipe I use for Blueberry Muffins: Makes between 12 and 14 muffins.

145 g Polenta (powder).
250 g Self-raising flour.
175 g Caster sugar.
350 g Blueberries.
160 g unsalted butter.
2 Eggs.
350 ml Milk.
2 Pinches salt.

Polenta is a powder, similar to flour but yellow, which is available in larger supermarkets and health food shops.

Use two mixing bowls, a large bowl the dry ingredients, a smaller bowl for the eggs and milk..
In the first bowl add the polenta, flour, sugar and salt and mix well.
In the second bowl wisk the eggs and milk.
Add the eggs and milk to the powders. (don't mix yet). Add the melted then cooled butter. Gently fold the mixture together (don't wisk as that means the Muffins won't rise).
Gently fold in the blueberries.

Spoon into buttered muffin cases filling each until it's about to overflow. Bake at 400 ºF (gas mark 6) for 15-20 minutes

I think it's appalling stuff. I managed to eat it once, in Bergamo, when the lovely guy was convinced he could make it edible for me and stirred loads of cheese into it, with plenty of salt and pepper!

That wouldnt make me try it! I dont like melted/hot cheese unless its on pizza or its halloumi (yummy)!

Yes definitely keep the fruit frozen - just add at the end before putting into the cases. They defrost nicely while baking and keep nice and juicy. I usually add a couple on to the top of each one as well just sort of sticking them in a bit. Blueberries are the best. I also do raspberry and white choc chip too. Have fun!

Polenta powder is virtually tasteless so it won't affect the taste of the muffin . It is as nutruitious as flour.

Many muffin recipes end up looking and feeling like a sponge cake. Polenta gives the muffin a smooth yet crumbly texture.

Hmm, there out on the lawn for the birds to eat now!
And it's been raining for hours so i'm sure they'll be nice and mushy!
My mum tried to eat one and she was like 'mmm ... not quite right are they?!'
I was like mum, don't try and be nice, they're icky, i'm chucking them out!! :oops:

I've never ever heard of using Polenta before!
