Beef, but very difficult to find in supermarkets.

Never tried Heck, usually get sausages from local farmers market - expensive but way better than anything from shops.

If I had to buy from shops it would probably be Morrisons own brand (signature) or maybe Lidl, but I haven't really tasted any as good as the market, might give these Hecks a try.

    A tad salty.

I found Heck sausages to be full of liquid when cooked.

My favourite sausages are these bad boys:

"Good Little Company great big sausages"

Might be worth trying your local Farmers Market if there's one near you - that's where I get mine from and they're delicious.

Also, if there's a Polish shop anywhere near you I'd recommend trying Polish beef sausages - scrumptious flavours (but some a bit too salty) imho.

is 87% meat content sufficient though?

    I find them meaty enough.

I believe because there isn't so much have fat in them compared to other sausages it gives them a meatier taste, if that makes sense.

No, it's just that you never get any bits of fat or gristle in them. I concede that that's probably because there's no meat in them but they're still nice X)
