    Can anyone tell me why HDMI 2.0 is used & not HDMI 2.1?

    The full HDMI 2.1 feature set is only supported by a 48Gbps cable. USB-C DP alt mode supports DP 1.4, with 4 HBR3 lanes for 25ish Gbps.

    Thunderbolt 3 supports DP 1.2, but 8 HBR2 lanes for 37ish Gbps.

    Almost USB-C to HDMI adapters use DP alt mode, then convert the DP interface to HDMI (HDMI alt mode was a thing but almost never implemented).

    All this means that the final conversion is the limit. Given there's only 25Gbps to play with, it's hardly worth implementing 2.1 features.

    The TB3 to HDMI ones that support 8 lanes and HDMI 2.1 don't actually support the full HDMI 2.1 set natively. They rely on DSC for anything that exceeds the 37Gbps limit. They will support HDMI 2.1 features like VRR though.

    The HDMI 2.0 ones won't support VRR, because it's not implemented in the DP to HDMI conversion.

    A normal "HDMI 2.0 cable" will actually support VRR, but at lower resolutions. There's no such thing as a HDMI 2.0 cable, it's just an 18Gbps cable. So it will support anything that doesn't need more than 18Gbps.
