For a TV though, if you can't get into the joists, Snap Toggles are a good option.
If you're into dot/dab, then a normal plug can be used if you're into the dot dab. If you're fixing into a shallow section where the dab isn't, you can use a CoreFix to go into the stone behind. Or if you want to use a fixing on the plasterboard with shallow depth behind it you could use a T-Bolt or BullFix which work with shallow depths.
I'd stay away from GripIt fixings. You have to drill a relatively large hole and the wings on the back are small. Which means they're not very strong as they don't spread the weight very well. (edited)
They work decently in cavities, plasterboard, block, brick... no more keeping different plugs for different materials.

However, it's worth noting that in the scenario you describe, 'traditional' red wall plugs are likely to perform pretty much the same. (edited)
