    Genuine question, how does wrapping meat in grease proof/baking paper compare to this?

    Not much different, to be honest, just make sure you used unbleached stuff.
    I've used both, and butchers paper has the advantage of being thicker and easier to handle once cooked, but it's really not worth the extra money.
    I think it's just a case of butchers paper being much more widely available than it is here.
