Slow cooked for 6 hours with Cider Vinegar, Chipotle Chilli Paste, Chicken Stock, Oregano, Cumin. Barbacoa baby, yeah!

Best use of this meat is to make salt beef. Plenty of information how to make on internet. Makes the best sandwiches with gerkins ever

Yes probably about an inch in the bottom to create some steam, I reduced it down on the hob afterwards to make a nice spicy gravy. Lots leftover for lunch tomorrow too

What's a 'bit of stock'? Up to a level to cover the onion base, or not that much?

Blimey you're fast off the mark! this only finished a week and a half ago!

Just remember you need to cook silverside low and slow and keep it well basted otherwise it's really tough.
Don't just cook it like you would a piece of topside.

I would have to agree. I have stayed a couple of times at a couple of locations, and actually paid full price for a burger from the menu on one occasion. I am not a fussy eater, and generally eat anything put in front of me, BUT the burger was inedible, my stomach still churns at the memory of it!
