    The problem with out of date plaster (particularly if you don't know how old it is) is that you don't know how it'll behave.

    If it's been stored well and hasn't been long out of date (a month or two) you might be lucky, otherwise you could easily find it either doesn't set, or it's setting so fast in the bucket you haven't got a chance to get it on the wall. Then you're lumbered with disposing of it.

    This is why stores sell it at such knock down prices (or sometimes struggle to give the stuff away). They know most people won't touch it, because it's risky, costs to dispose of (since you're not allowed to chuck gypsum in skips or the bin and some recycling centers charge to take it too) so it's usually not worth the hassle. Unless you maybe wanted a little old stuff for quick small jobs like filling chases or something (but this is the wrong type of plaster for that).

    Edit: someone mentioned the date on it is 05/04/24. If that's true, as long as it's been stored somewhere dry it'll probably be fine, but you don't want to be buying it for any job that you're not ready to do very soon imho. (edited)
