I just managed to pick up a copy of Minecraft from CD keys

You get a code which you redeem on the publishers site

I signed in with my Microsoft account and clicked redeem. Entered the code and that was it.

    Back down to £12.99. Does redeeming the Java edition give access to bedrock? My code doesn't seem to work for the Java & Bedrock redemption box :/

    It did for me. I had to go to here: minecraft.net/en-…ile
    then logged in with my Microsoft account and once in there is a redeem on the left menu. Entered the code from cd keys and it asked me to go to the Microsoft store and it showed the Minecraft launcher in my account. I used the windows store to download that and can run both bedrock and java

    I get it now, I was just confused as I remember running a seperate launchers years ago for java..but then Microsoft bought them so makes sense

    Is minecraft a game that you can buy on PC then play it on Xbox too? or is it a different key?

    You need the Xbox key to play on Xbox. That’s the version that is normally a few quid.

    Is it a one-time activation, or can I activate then uninstall/release the key?

    Asking because I want to install on an older laptop for my son, but would like to uninstall if the laptop isn't up to the task.

    All modern digital codes are one time activation only, I don't think there have been re-useable codes since the days of PC CD/DVD games before Steam when it was the combination of the code and having the disc in that confirmed ownership.

    These days best bet is probably finding a demo before actually buying the game. That said, Minecraft is about the easiest (3D) game out there to run, unless the system is truly ancient it will probably run it at least at minimum settings...
