Has ANYONE been successful at growing their own herbs? I have tried multiple times but they just wilt after a week or so. Any good guides or tips from a green thumb?

Yeah moderately, there's always some that are really finicky. Wilting sounds like overwatering (maybe?) The seedlings only need real watering once in a while in seedling stage, easing on the watering makes seedlings SEEK OUT/ STRETCHING for water, building a healthier root system. Stuff like basil and thyme and chives (probably most, really) can be overseeded, maybe 5-8 seeds per pot or small module. A typical 19° windowsill in a room would help germination too. Anyway, could go on, but check out some growing guides for your specific herb on YouTube. Good job for giving it a go.
