Don't waste the peels! Chuck em in a jar with some sugar, water and (if you've got em) a cinnamon stick and some cloves - 4-5 days later, you'll have a delicious fermented Mexican soft drink called tepache. I've got the full recipe in my book, Of Cabbages & Kimchi - but for HUKD you can find it here for free 🍍
