annoyingly, bbc iplayer UHD content only works on Max, not standard 4k. Really cheeses me off that.

Iplayer UHD no longer works on the non-max. Not huge amounts of UHD content, but with the World Cup this year, could be a consideration.

An Alexa speaker, and an ethernet port built in.

Don't think it has an ethernet port built in, but does rather comes with a USB to ethernet adapter. You can still connect via ethernet, but you'll lose your USB and its probably slower than WiFi 6.

Edit/correction: finally managed to find a picture of the adapter and looks like that has ethernet and micro USB built in, so you should be able to access both. (edited)

I've got the 4k and 4k max, the 4k max is noticeably faster when scrolling through stuff etc (no lag or delay whatsoever), the remote is improved slightly, WiFi 6, and you can do full Alex control including displaying your front door with PiP assuming you have a ring doorbell. The specs don't show it to be much faster but I can definitely tell. Replacing the 4k in the bedroom with this max but mainly because I've broke the remote and don't like using the TV one as much (no microphone etc). If you don't have either and use it most days I'd 100% say pay the tenner extra and get it over the 4k. Even if you have an old 1080p TV I'd still buy the max out of all the sticks for how smooth it all is. Never tried the cube, have an echo in the bedroom and only use regular apps so not sure I need one. (edited)

Set all regular programs + sports to record on the Virgin box, watch netflix through the TV app which seems fine. Just not sure what apps I would load onto the fire stick? I'm probably best researching as there must be some reason why people go wild for them every time they are on offer?

No mystery, they are a very cheap, high quality streaming device in an age where people are leaving the likes of Virgin and Sky for streaming services in their droves because they are shockingly bad value. Even people who want Sky programming are turning to NowTV. There is also the less legit capabilities they offer that some want to use and again they are a very cheap, high quality route into that side of things though that probably appears more popular than it is to you because why would anyone bang on about everyday stuff which is the bulk of their market.

If you're happy with the way you consume media it's not for you so don't worry about it.
