» 1 tsp oil
» 2 onions, diced
» 3 garlic cloves, finely chopped
» 1 tbsp fresh ginger, peeled and grated
» ½ tsp dried chilli flakes
» 1 tsp cumin seeds
» 1 tsp coriander seeds
» 1 tsp mustard seeds
» 2 tsps ground turmeric
» 1 tsp garam masala
» 1 cup (200g) red lentils, rinsed and drained
» 1 full tin chopped tomatoes
» 1 full tin coconut milk
» 2 cups (500ml) chicken/vegetable stock
» salt and pepper to taste
METHOD:
Heat the oil in a large pan over a medium heat, then add the onion and cook gently for 5 minutes. Add the garlic, ginger and red chilli and cook for a few minutes. Grind the cumin, coriander and mustard seeds in a pestle and mortar, then add to the pan, along with the turmeric and garam masala and cook for 1 minute. Add the lentils, tomatoes, coconut milk and stock, and stir to combine. Season well with salt and pepper and cook on a medium/low heat for a good hour until nicely reduced and thick.
You could also add in some peas, sweetcorn or diced sweet peppers to add extra colour & flavour.
Makes approx. 6 good servings.
You won't want anything else afterwards!
