The problem comes from cheaper brands adding sugar syrup, which is illegal but done under the radar at factories where they import some of the honey from places like China.
So, in a long winded answer to your question, it’s very unlikely farms would add sugar syrup as it would add extra steps to their process and they don’t sell cheap honey.
im sure there was a time back when most UK supermarkets had honey that wasn’t messed with or added to in some way, now it’s all getting close to the American style fake honey with hardly any good stuff left.
Good honey sells itself. Anyone who has to discount is deeply sus.
however most of you are correct, from what I have heard Honey is widely adulterated, because there is no exact test to confirm yes or no.
Honey is essentially a form of sugar (complex sugar as opposed to kitchen sugar, but sugar nonetheless) with additional DNA and bees enzymes. Therefore as you can imagine if you add some type of processed cornstarch to honey it will pass most of the tests.
Having said that, there is no evidence that supermarket honey producers are actually adulterating. just a suspicion based on ultra low cost. In UK producing a bottle of honey costs many times more than what you get from some supermarkets.
I moved to purchasing honey from known sources (mostly local or EU countries like Greece and Spain and sometimes Newzealand), mostly for my own peace of mind. That also gives me opportunity to taste different types of honey.
Lastly the bit about taste - yes different honey will taste difference. Each batch, from even the same hive, will be different. Some may even taste bad to some people, depending on their taste buds. It is a natural product.
