Delia Smiths 1990’s Summer Cookbook roasted red pepper recipe is simply the best and I do this recipe year round when peppers are on offer, as Delia would say at a Norwich football match, ‘let’s be having you!’
From what I remember:
You will need:
4 peppers, 4 fresh medium tomatoes (you can use tinned plum tomatoes if no fresh available), 2 garlic cloves, tin of anchovies, freshly ground black pepper, olive oil (extra virgin ideally), shallow dish or baking tray
-slice 4 peppers in half including the stalks, scoop out all seeds, making 8 halves
- lightly score and put 4 medium size fresh tomatoes in bowl and pour on boiling water, leave 1-2 mins then slip off the skins and half and then quarter them - 2 quarters in each pepper half (you can use tinned plum tomatoes quarter to save time)
- thinly slice 2 garlic cloves and place some in each pepper half
- use some scissors to cut up anchovies into smaller pieces and divide between all the pepper halves (you don’t need to add salt to this dish as anchovies are very salty!)
- add some freshly ground black pepper to each half
- pour 1/2 tablespoon of olive oil over each half
- place baking tray with peppers in preheated ovenfor 35-45 mins
- it’s ready once pepper tops are slightly blackened
- enjoy as a starter with some crusty bread to soak up the juices!
