One of our growers, Giles Abrey, has been growing potatoes for over 40 years. Giles and his team grow their crop on irrigated, free draining, sandy soils in Norfolk and Suffolk. Their baby potatoes are grown on carefully tended fields to ensure a smooth shape with a bright skin and rich, distinctive flavour. Not only perfect for salads but can also be roasted.

- Scrub gently and rinse well.
For boiled
Place potatoes in saucepan. Add just enough cold water to cover potatoes in full. Cover with lid, bring to the boul and simmer for 15-20 minutes or until tender. Drain well before serving.
HOB
For Steamed
Place potatoes in a steamer above a pan of boiling water. Cover with lid and steam for 15-20 minutes or until tender. Stand for 2 minutes before serving.
Oven
For roast potatoes: Adjust over rack to lowest position. Pre-heat oven. Pour 2-4 tbsp sunflower oil into a roasting tin and place in oven. Either use whole or cut the larger ones in half (adjust cooking times accordingly). Put potatoes into the hot roasting tin. If halved, place cut side down. Return to the oven and roast for 30-40 minutes, turning potatoes occasionally until tender and golden.
Microwave
Place half of the pack into a microwaveable container. Add 2 tablespoons of water, cover and cook on full power. Leave to stand for 1 minute after heating

Roasted Baby Potatoes with Garlic and Thyme - Serves 6
Ingredients:
1kg Baby potatoes;
2 tbsp olive oil;
2 garlic cloves roughly chopped
4 sprigs thyme, leaves only.
Method: Preheat oven to fan 200°C/ Fan 180°C / Gas 6. Cook the potatoes in a large pan of boiling water with lid on for 15 - 18 minutes, or until softened. Add salt if desired. Drain potatoes and transfer to a roasting tin. Using the back of a wooden sppon, gently crush the potatoes until slightly flattened. Drizzle the olive oil over potatoes. Season well and toss with garlic and thyme leaves. Roast for 20 - 25 minutes or until golden and crispy. Mix it up by substituting the garlic for lemon zest and the thyme for rosemary.
