Looking for NVME SSD + enclosure recommendations

I do not need a portable ssd right now, but I will in the summer. What models should I be looking out for when they'll go on sale?

Requirements:

• 2TB storage
• Fast enclosure port but not necessarily the fastest, if it's too expensive

I will mostly be using it for Final Cut video editing on my Mac mini.
