So depending upon what you're on, you may well be better off using the onboard WiFi which has external antennas to get a better signal. Train WiFi in my experience will remain connected in a tunnel but mobile data won't as another example.
If you want to use mobile data though, just make sure your phone is on a network with good rural coverage and then tether with that. Use USB if worried about battery life.
