It's worse for me, I've got pulled pork. I know it's swings and roundabouts but what I can do with belly pork would make your grandfather raise an eyebrow or five. From the gluey, melty, slow cooked sensuality to the crispy pepper crackling. But what if you want both? If you can get a whole piece of belly pork then slow roast it low so you get the glueyness-ness, put it on a plate with a plate on top of it and a weight so it gets really flat and put it in the fridge overnight and then the next day slam that skin on a barbeque for the best of both worlds.
Michelin starred chef Glynn Purnell almost does something as good but with a frying pan. Almost. If you do it with your barbeque then for a brief, but oh so amazing period of time then you'll be better than Michelin starred and your mouth will be in love with you for hours... weeks... maybe have a holiday romance in your own shed. Sadly that's what I have to do. Mademoiselle, sadly she has never been a fan of pork... of any kind.
