Looking to buy a pc mainly for racing sim (Assetto Corsa Forza etc). Would I be better off building my own or a pre made one?

I think the only correct answer is unfortunately "it depends".

Generally speaking, building your own PC is cheaper. However, you have to be comfortable with the fact that you don't get a warranty for a self-built PC, only for each component. I would suggest using PCPartPicker to check the self-build cost and compare that to whichever pre-built website you're looking at.

TLDR: Find a specific pre-built, then add all components to a self-build website checkout and compare prices.
