Cooking instructions: Oven

To oven cook from chilled. Before cooking: Preheat oven 220°C / Fan 200°C / Gas 7. Remove all packaging and place the joint on a chopping board. Rub the rind dry with kitchen roll and cover with 2 tablespoons of salt, working it into the cuts. Leave at room temperature for 30 mins. Rub all the salt off the joint and from between the cuts. Pat dry and lightly cover the rind with 1 teaspoon of salt. During cooking: Cook for 30 mins per 500g plus 35 mins. After 25 mins, reduce the temperature to 180°C / Fan 160°C / Gas 4 for the remaining cooking time. If the crackling is still a bit soft, turn the temperature back up to 220°C / Fan 200°C / Gas 7 for the last 15 mins. After cooking: Allow the joint to rest for 20 mins before carving. Check food is piping hot and no pink colour remains. All cooking appliances vary. This is a guide only.

Warnings:
This product is not suitable for rare cooking. Do not undercook raw meat. Keep raw meat separate from cooked foods. Use separate kitchen utensils and surfaces for raw meat and cooked foods or wash them thoroughly between use. Wash hands after handling raw meat. Raw meat may contain organisms hazardous to health. Cook thoroughly until piping hot throughout, no pink colour remains and the juices run clear. If not fully cooked in accordance with the instructions harmful bacteria may remain.

Storage
For use by date: see front of pack. Keep refrigerated. Once opened, use within 2 days and do not exceed the use by date.

For best Quality, freeze as soon as possible after purchase and always within the use by date. Once frozen use within 2 months.

Defrost thoroughly and use within 24 hours. Do not refreeze once defrosted.

Health
On opening there may be an odour from the pack. Remove the pork from the packaging, drain and leave to stand for a few minutes. The odour will quickly disappear, The eating quality of the pork is not affected by the odour.

    Never had any success with Pork Leg outdoors to lean I find and crackling doesn't crackle even at high temp, before pork cooked.

    I tend stick to shoulder, ribs, belly, cheeks or tenderloin for pork on the Smoker

    No one can argue with pork joints at £3 a kilo now.

    I once done something like that but from fresh meat for a wholesale market.

    Half of them were chucked out due to the amount of time in a chest freezer. Brilliant idea for a large family though.
