Don't take UK bank card, if U got/can use, use Revolut great exchange rate comparing to banks or exchange points.

SIM Card could be an issue, because to buy a SIM Card (plan to have lots of Mobile data, etc. you need to 'register' if U got no polish mates then I would advice to take Roaming plan with UK Network 😁).

    Which City U going to?

Buy any sim in UK that allows roaming (Lebara I recommend, did not had any issues). Not sure how many data you need but take unlimited data from Lebara on promotion if available and then cancel it after a month.

About spending, depends which bank you are using, use Revolut / Monzo / any fee free card. (edited)

Both Chase and Starling convert at the exchange minus 1%, but with Chase you might almost get that back if you are in the 1% cashback qualifying period.
    Otherwise there are no fees.
There is currently a 20gb Lebara SIM for £1.99 if you search the listings. Lebara works well in Hungary. I doubt if Poland would give a problem.
