    These are excellent knives for money. I have chef knife and butcher knife and both retain their edge very well. Just a shame they don't do a serated knife.

    Absolutely agree - I have a couple of Starrett's, and while they aren't 'Sabattier' beautiful they are very sharp, capable, and well-made for working kitchens. The 10 inch steak knife is only 9.99 too. (edited)
