I’ve noticed there’s a auto redeem game pass ultimate now for 10500 points a month, now that gpu is £12.99 that’s not bad value, especially when they remove the gold option at the end of the month of whenever it is.

Does anyone know how it works if you already have a stacked subscription?, does it add a month to your current expiry date everytime it takes the 10.5k points off of you or does it only work with if you’ve let your subscription run down?.

Believe that subscriptions get sent as codes. So you would get a code each month. I know Gold is sent as codes.

While Gold is going, it's being replaced by Gamepass Core, so I would say 99% that what happens with Gold and conversion will still be the same but with Gamepass Core. You can already use Gamepass Console or PC to convert to Ultimate as well, so Gamepass Core will be the same.

So if you have Ultimate already, you're still probably better getting the Gold codes via the Points, and when it changes to Gamepass Core, check Microsofts website and double-check that the same conversion applies and use that. (edited)
