Caveats:
Rumble currently doesn't work for Stadia
It can't wake a Switch from sleep in the way a pro controller can
It inverts ABXY to nintendo layout
You have to enable USB pro controller functionality in the Switch settings (unsure if this impacts anything but it's disabled by default)
The desktop software that allows for tons of controller configurations only seems to support several controllers (PS4, PS5, Xbox One, Xbox Series S/X and several 8bitdo ones, I thinkg)
Not really a deal. Its been consistent with that price for a very long time.
I believe the 8bitdo Pro 2 can connect to 3 bluetooth devices at once though; assuming your windows machine already has bluetooth support I think you're probably best off just setting a profile on that controller for each device separately.
Not sure what the dongle you linked to would be for; unless you don't have bluetooth already on the windows machine
Only issue I faced was initial pairing. Am planning to try it out with stadia controller (that's been updated) and see what it's like
