sorted byAsk the fishmonger to have it pan-ready for you, heat a little olive oil in a pan, season the fillet side of the fish, lay it down in the pan (skin) side, after around 8 minutes you'll see the flesh is cooked, serve with boiled potatoes and carrots (melt a little butter over them). Voila, ready to eat.
Seabass has a buttery taste to it, you don't need to add a strong sauce when serving, the seasoning alone will do a grand job.

I've just googled it myself... Oven at 170-190, rub with olive oil, sale n pepper, herbs if you like, roast uncovered 20-30 minutes. Eat.
I'm not a fan of fishy fish but this is supposed to be mild and ok for us non fishy fish eaters...

You'll have to translate it, but the Spanish way of doing Seabass is my favourite, and literally as easy as it gets..
When you ask them to have it pan-ready, that process doesn't involve de-scaling the fish so there shouldn't be any reason for them to refuse. Just think of the fish being split straight down the middle, guts and head removed - that's all, pretty straightforward.

Yep...wild sea bass are much harder to find and typically cost about £30 a kilo!
it's also illegal for fishermen to retain them if they are under 42cm long,
and these ones are much smaller than that
The fishmongers in our Tesco Extra refuse to descaled whole fish. Its a mucky business & can get your kitchen in a right state,
Thanks. That looks a great way to cook sea bass, or sea bream too. I'd also put some Rosemary and garlic into the cavity.
