Amazon is including Exchange rate guarantee fee: GBP 26.96 when paying in GBP so it's much better to pay in Euro what would bring the price down to under £1200 using fee-free card.

Is this still single use device? ( can you change the hard drive)?

So YOU can decide how much flash storage should cost rather than Apple? Hohohohohoho! Do Apple phones allow for expandable memory? Apple offers you something MUCH better- an EXCUSE. And Apple profits prove Apple EXCUSES for lousy anti-consumer practices are a great selling feature.

Apple cult followers know never to question the doctrines of their cult- what Apple offers at any moment in time is PERFECT for Apple customers- so consume, not question.

what's a fee free card? could I use it aboard for transactions when on holiday?

Yes. There's cards like Monzo or Chase that use Mastercard's rate but don't charge you the 3% fee that most high street banks charge. Better off going with Chase and getting 1% cashback on-top.

I think I will wait for M3 - these processors are getting better & better, but not quite there yet in terms of raw gfx power to rival windows unless your get a separate external gfx card
EDIT - I should add I have an M1 it's great for emulation gaming

Yes, let's wait forever for the universe to perfect planetary alignment but I suspect you won't be happy when the M3 finally arrives. Strange logic.
