I can't decide whether to get this or a Macbook Pro with M1 Pro or Max for video editing and photoshopping. Being able to game would be nice too.

Depends what your situation will be like with power. If you spend 99% of the time connected to a wall I prefer Windows and a 3070ti but the area MacBooks destroy windows laptops, is when running off battery. MacBooks will run at the same speed, if you benchmark them you will see little difference between results on and off wall power.
You try that with a windows Laptop and it’s dramatic the difference. Most windows laptops loose a lot of performance when just on battery

I went through 5 of these before giving up (various issues with each) - the quality assurance seems very poor for such an expensive machine.

What issues did you experience? 5 times is a crazy amount but saying that I had to return a gigabyte laptop three times until I got a working one. Dead pixels... Keyboard dead... Battery issue etc

Your post may have been in jest, but I'll give it 5-7months and it will drop to that deal level.
It is a great laptop looking at it from the spec sheet, but the price...way way wayyy too much for last gen laptop with 'issues'.
