Sabatier is a generic name (unprotected), which many companies use to sell cheap knives.

Didn't know this. Useful information, and explains a lot.

Sabatier isn't what it used to be, I have a set of their knives and friend bought me a set of IKEA own brand knives which are far better.

It’s not a brand. It’s like saying Champagne isn’t what it used to be. It’s an umbrella term.

Sabatier is the maker's mark used by several kitchen knife manufacturers—by itself it is not a registered brand name.

I'm a knife professional, a knifeessional, this knife isn't the knife it used to be when knives where built like knives.

You would be far better off paying a bit more and buying a Victorinox

I dropped the very same knife yesterday in the kitchen , from about 1 metre onto a wooden floor , used it 2 mins later to chop a cucumber , the blade snapped clean in 2 , a few inches from handle . Scary (edited)

To be fair, that would happen if you dropped a high quality hardened steel knife.
