All my pizzas are done at room temp fermentation. Cold fermentation thats usually putting it in the fridge has the benefit that you can make the dough last a longer time, without it overfermenting which will eventually collapse and destroy the gluten. I know most Dominos get their doughs made in a factory, and delivered chilled.. they're made so that they can last many days before the dough get soverblown. I make mine in morning, so by dinner its time about 6-8 hours. Sometimes I do one overnight.. More yeast = quicker for dough to rise More warmth = makes dough rise faster The opposite is true. Longer fermentation is better than your average easy bread recipe that might call for an hour or two rise. This is because longer fermentation creates more complex flavours and I think it effects the appearance a little too. Here's a table you might want to use keep in mind its not 100% accurate and its not really for someone who wants to make a dough in a few hours. IDY = Instant dried yeast.. its what I use. ADY = active dried yeast.. usually required activating in water before use. CY = Cake yeast.. forget about that. So for example most of the time its about 20.5c in my house I want the dough to be ready in about.. 6 hours 0.160% instant dried yeast is what I use. That is 0.160% of flour weight. You might want some cheap 0.01g scales for this. I use bakers percentages. 100% is your flour weight. Everything else is a % of that flour. for example 100% 500g of flour 58% water 290g 0.160% IDY is 0.8g 1.75% salt 8.75g 2% sugar 10g 4% oil 20g oil If you want to learn more look up pizza making forum you can find me there :)

I last had PH a year ago and it has gone downhill a lot over the years hardly any cheese toppings etc.. I make my own pizza now in convection oven, I preheat a slab of steel (stone would work too) and slip the pizza in oven using a peel with parchment paper.. then remove parchment after two minutes. 6 minute bake time. Yes this pizza was a lil wonky. :) Used with just cheap Lidl brand bread flour. Mozarella with a bit of cheddar.. the pepperoni were actually hungarian sausage slices from Lidl Eastern Europe week so I stock up and freeze them. Taste waaaaaay better than anthing Dominos/Ph/Papa Johns makes. Takes some time to master.. Only downside for me is its difficult to replicate pizzas with lots of toppings.. but I'm boring and like my pepperoni. :)

I actually have been put off Papa Js from a bad experience. Was in Presthaven and the complex had a Papa Js and the pizza was undercooked and barely had any toppings. Apparently we wasn't the first to complain. Loads said the dough isn't nice. I haven't had a bad experience with pizza hut or dominos yet so I'll stick to them
