We have been using a set of Victorinox knives for over 15 years and are very happy with them. We have the wood handled ones but I don't think they sell a chef's knife with a wood handle any more.

We have Global knives and have had them for about 12 years. I love them. Balanced, easy to use and maintain sharpness.

@MrHappyGilmore are you looking for a set? Or just the one knife? I had a knife made by a maker close to where I live. It cost just under the £200 mark and is honestly the best knife I've had. We worked together on the steel, handle, size and design completely one of. Kind and will certainly outlive me

I use a serrated pastry knife from victorinox for all my meat carving needs. Think they're around the £25 mark on amazon at the moment. There's no real need to spend any more if you're only using once a week to carve meat (edited)

do not waste your money on a set of knives spend more on the specific knifes you will actually use
also worth investing in a whetstone as well to keep them sharp .

i have a japanese knife i purchased last year in tokyo . a kitchenaid cleaver and
    some cheap victorinox Knives .
decide what your using the knife before spending any money
