Instructions:

Click - Check availability on click and collect
Enter postcode
Click find
Then it will bring up a list of possible collections (There are loads available in the North East area currently)
Choose your store
Then click on customise plan
Then pay for your device in full

Then choose the 1GB plan with £21pm and £249.99
click select this plan
Then on the next page scroll down and click add to basket
Then enter the code and proceed to pay

Once the phone / sim arrives, either PAC, STAC or call O2 to port your number out, therefore cancelling the contract, or if you ring them, just cancel the contract
