Anyone know of a dock which supports higher refresh rates? Every one I've come across doesn't go beyond 60Hz

Look up the TB4 specs. In theary the TB passthrough should do whatever comes out of your PC. Keep an eye on the max 40Gbps data rate though. 4K @ 120Hz is 36Gbps... I'd suspect you're out of luck until TB5 comes along.
