That's rather interesting... never lost mine. Is the account under your NHS email address? If so, message them in the contact us section as ask to have it re-instated. I remember when I first applied before receiving my "nhs.net" email address (I have two NHS emails, my nhs.net one and my royalberkshire.nhs.uk email), I had made an account with my Royal Berks email one and it took about a week to add the discount code onto my email after sending a message on the "contact us" section of the app... It can be used any day of the week, just once per week and it's always been like this where it resets on Mondays. It has been for years.
You can use the Discount on Sunday and have it reset the day after, Wednesday, still reset on Monday, Monday, resets a week later etc... and anything and everything is discounted. Why the Mods initially put down "Main Menu Items" prior to me editing I'll never know as I've never come across an item this didn't work on, including their limited time, £8 meals. (edited)

If it's not people pointing out that the food is unhealthy (as if NHS staff aren't also allowed to eat junk food in moderation) then it's people whinging that the discount is only for NHS staff and not for them.

As somebody who could get this discount, it's surely time for this NHS discount privilege to stop.
Many NHS staff are very well paid in terms of cash and non cash payments (leave, pension, continuous service and so on).
Bus drivers, couriers and non NHS employed carers, who risked their lives during the pandemic, deserve a little bit of this largesse.
