    More Fat on the shoulder 14g as opposed to 10g per 100g for the leg.

    Yes that's why its more tender, juicier and unctuous compared to leg that can be dry if cooked badly

    In what way? Like your question pretty much has the answer within it. One is a shoulder and the other is a leg.

    Leg will be a little leaner and unless you slow cook the leg with stock, we found it to be quite dry. Shoulder is a little more fatty and is more tender and juicier.
    Nevertheless, always look up the recipe if you don’t have experience in cooking a certain cut/ type of meat.

    Don't buy from those shops they buy old, mastitis infected animals for cheap and sell them to ethnic minorities at an inflated price. Terrible that people fall for it.

    you can get more leaner pieces of meat from the leg , both will be tender if slow roasted covered in a pan for many hours
