sorted byLeg will be a little leaner and unless you slow cook the leg with stock, we found it to be quite dry. Shoulder is a little more fatty and is more tender and juicier.
Nevertheless, always look up the recipe if you don’t have experience in cooking a certain cut/ type of meat.
