sorted bymix 500g lamb mince with huge handful parsley, fine chopped onion salt pepper, shape into 4 kebabs
Fry or grill, if frying, ideally with a griddle pan
when finished, drizzle with sweet chilli sauce,
grind down a small amount of pistachios and fennel seeds, sprinkle on top (the sweet chilli sauce ensures they stick)
