Each blade is crafted from durable X30 Stainless steel referred to as X30Cr13. This denotes the use of 0.3% carbon for outstanding edge retention and 13% chrome for high corrosion resistance.     I have the Nihon chef knife and the Nihon santoku got each for 10quid each they are fairly hard. Easy to sharpen lose their edge quicker than more expensive knives. The handles are not finished so I treated them with linseed oil. I wouldn't put them in the dishwasher (but I wouldn't put any knives in there)

    They are very good for the price, I’ve had the full set for over a year they’ve held up well. Very sharp out the box & nice to use.

    Had to sharpen my Nihon X30 Nakiri Knife after purchase. Handle definitely needed oiling. Would only ever hand wash as advised by the retailer.

    The stainless steel these are made of is not great for knives. The edge retention is absolutely terrible. Buy a VG10 knife and thank me later.
