So got the Samsung AU9000 50 inch TV.

With the controversial S95b nerfed brightness..

Should I update the au9000 for my kitchen TV?

Your tv is only 350 nits, Samsung ain't bothered about reducing your brightness any lower and you might as well not have the TV on.
The majority of updates your tv will receive would be security ones, so you should update it.

The only reason why the S95B was reduced was to ensure the longevity of the OLED panel.

I have the S95b in 65 inch model and on 1302 fw

I used to have the old Samsung KU6400 for the kitchen which was 400 nitts peak brightness. (edited)
