Sultanahmet hotels can be very hit and miss. Some extremely basic. Depends what you are going for. If just for fatih and old city /mosques etc, perhaps the more basic option is fine. Otherwise consider slightly outside old city. Even taksim if you can bear some of the more modern vibe. Metro and tram system can connect you most places with a little walking. About 15-20 minutes from taksim square or Galata end to sultanahmet . (edited)

We stayed at Hotel Sari Konak in Istanbul in 2017. The roof terrace had a direct view of the Blue Mosque. The hotel and its location were great. The menace of Istanbul however is its taxi services. Unless something has changed there's a refined and aggressive scamming syndrome there. We were unable to trust hailing a cab at all. Popular cab hailing apps like Uber where you know the price in advance and only pay that are banned in Turkey. Convenient, that. Other thing to prepare for is that most UK networks don't offer roaming in Turkey so getting data on the move is a real faff.

I would suggest doing an air bnb

Stayed at the Sultanahamet hotel back in 2017, room was basic however breakfast was great which had a roof top terrace.
